This recipe is not only easy but also a gazillion times healthier than the regular cheesecake we're all familiar with! 


It's an absolute winner and very versatile, so you can make it any flavour you want - remove the spices and top it with fresh berries, chocolate or whatever you fancy!

Ingredients

CRUST

1 cup Pitted Dates


1 cup Walnuts


1/2 cup shredded Coconut


1/2 tsp Salt


1/2 tsp Vanilla Extract


1/2 tsp ground Cinnamon


1/4 tsp ground Ginger


1 Tbsp Coconut Oil / Optional if needed


CHEESECAKE

2 cups Raw Cashews / Soaked in water overnight (or minimum 6 hours)


½ cup Cashew Milk / or Coconut Milk


¼ cup Coconut Oil


⅓ cup dark Agave Nectar


1 Lime / juiced / Add to taste


1 Tbsp Vanilla Extract


1 tsp Cinnamon


1/4 tsp Nutmeg


1/4 tsp ground Ginger


pinch of Salt

Instructions

For the CRUST 

  1. Combine all of the ingredients in a food processor and blitz until they come together into a sticky kind of dough. Add a bit of coconut oil if the mixture looks too dry and doesn't stick together.

  2. Press the mixture into your silicone cups creating a crust roughly 1cm thick.


For the CHEESECAKE 

  1. In the same food processor combine all of the cheesecake ingredients and blend until the mixture is silky smooth and creamy. Take your time making sure the mixture is as smooth as possible. Add a bit more milk or oil if needed.

  2. Taste the mixture and adjust the sweetness/tartness levels to your taste.

  3. Spoon the filling into the prepared cups on top of the crust mixture.

  4. Sprinkle some chopped walnuts over the top.

  5. Place in the freezer for roughly 3 hours or until set.

  6. Before serving let it thaw at room temperature for 10 - 15 minutes.
