Butternut and cauliflower are a match made in heaven, especially when it's paired with the rich, aromatic flavours of Rogan Josh.
The name "Rogan Josh" comes from the word Rogan meaning "red colour" and Josh meaning passion or heat...but don't worry, this curry is not too spicy at all. The sweetness of the butternut balances the spiciness beautifully.
Rogan Josh is a bit different to regular garam masalas as it's sweet and tangy with spices like cinnamon, cloves, and cardamom, deep red and complex with a base flavour of onion, garlic, and ginger.
This Butternut and Cauliflower Rogan Josh Curry is a winner dinner idea for a few reasons. It's also one of my go-to recipes when I have friends around for dinner, and I don't have lots of time to prep.
If you've read my article, 8 Ways to make cooking easier and faster, then you'll know I like to use store-bought spice blends and sauces to help speed up the cooking process.
I use store-bought Rogan Josh Curry Paste (I love the one from Waitrose) which saves me a lot of time and tastes amazing!
You can use already chopped butternut, which saves you even more time!
It's a baked curry, which means you don't have to hover over the stove. You can pop it in the oven and let it do its magic!
I like to serve it with bulgar wheat. I find the nuttiness and texture work well. AND bulgar wheat is really quick and easy to cook. Of course, you can also serve this with some brown rice which will be as delicious.
To complete the meal (or as a side to serve along with it), I like to make an Indian Cucumber Salad for some added freshness...I'll share the recipe soon!
BAKED BUTTERNUT AND CAULIFLOWER ROGAN JOSH
Ingredients
1 Onion / thinly sliced quarter rings
roughly 1kg or less Butternut / peeled and chopped
roughly 700g or more Cauliflower / chopped into smaller florets
a jar (200g) of Rogan Josh Curry Paste
1 can Chopped Tomatoes
roughly 1 can hot Water
TO GARNISH
Crispy Fried Onion Sprinkles
Chopped Fresh Coriander
Instructions
Preheat the oven to 180°C
Use a wide shallow ovenproof casserole dish that has a lid. If you don't have a lid, then you can use foil while you're baking it.
On the stovetop, drizzle a bit of olive oil and sautee the onions in the casserole dish until they start to go translucent.
Add the chopped butternut and simmer with the lid on for about 5min or while you're chopping the cauliflower. Make sure it doesn't stick or burn to the pot.
Add the cauliflower florets.
Dot the curry paste evenly over the top.
Do the same with the can of tomatoes, adding it evenly across the top.
Use the can to fill it with hot/lukewarm water...careful not to burn your fingers!
Add the water evenly over the top. You can add half a can or less if you think it needs a bit more sauce.
Cover with the lid (or foil) and cook on medium to low heat for about 5min...you want to hear a slight simmer or boil going on inside.
With the pot still covered, pop it in the oven and bake for 20min - set a timer.
Take it out of the oven and remove the lid. Scoop some of the sauce over the top.
Keep the lid off and put it back in the oven for about 15 - 20 min or until you're happy with how things are looking. You can turn the grill on for the last 5 minutes if you want a bit of extra colour and caramelisation on the top...just keep an eye on it.
Once it's ready, garnish it with onion sprinkles and freshly chopped coriander.
Serve it with Bulgar Wheat or some Brown Rice.
