ASPARAGUS ON TOAST

WITH SAUTÉED MUSHROOMS AND PEA HUMMUS / DELICIOUS FOR BREAKFAST, BRUNCH OR LUNCH / VEGAN + VEGETARIAN

Use this recipe as an inspirational guideline. I invite you to get creative, experiment, try new ingredients and different combos. If you don't have/like something, swap it out with something else. Taste as you go along. Trust your tastebuds and your gut...and most importantly, have fun!

I'll be honest, we don't have asparagus on toast often as asparagus is usually quite pricey. So when we do have it, it's an absolute treat!


I love this combo of the pea hummus, grilled lemony asparagus topped with sautéed mushrooms, all served on some good quality, organic wholewheat sourdough bread.


If you don't have time to make homemade hummus, you can use store-bought hummus, but I recommend you try making the pea hummus at some point as it's delicious!


This recipe is relatively simple as it's more about the combination of elements, so I'm not going to go into too much detail in the preparation of the separate elements. You've got this! ;)

Ingredients

Organic Wholewheat Sourdough Bread


Pea Hummus


grilled or pan fried Asparagus


250g brown button Mushrooms / sautéed


a sprinkle of Furikake or Sesame Seeds

Sautéed Mushrooms

  1. Chop the mushrooms as you prefer. 

  2. In a pan, drizzle a bit of olive oil and add the mushrooms. You can also add 1 clove of garlic, finely chopped ( optional ).

  3. Once they start to caramelise, add a dash of coconut aminos or balsamic vinegar and a good pinch of salt and pepper.


Grilled Asparagus

  1. Prepare the asparagus by breaking off the bottom ends. 

  2. Use a grill pan or a normal pan for cooking the asparagus. 

  3. Drizzle the pan with a bit of olive oil and cook the asparagus on a medium to high heat, turning them regularly so they cook on all sides. Be careful not to overcook it. 

  4. Once it's ready, squeeze some fresh lemon juice over and sprinkle with salt.  


Assemble your delicious breakfast!

Start with the toasted sourdough topped with hummus. Top it with asparagus and sautéed mushrooms. Finish it with a bit of lemon juice, a sprinkle of furikake, and some black pepper.
